What Are Peanut Butter Cookies?
These peanut butter cookies are the perfect solution for those of us craving peanut butter.
Peanut butter cookies are cookies that consist of peanut butter being the main ingredient. These cookies usually only consists of a few ingredients such as a peanut butter, eggs, vanilla extract and sugar, although some recipes may also add in flour and baking soda.
The cookies are known for their fork-scored patterns that run across the top of the cookies.
The cookies are soft, chewy, and pack a tonne of peanut butter flavour.
And as an added bonus, they are super easy and quick to make too.
How could anyone resist?
To make this delicious peanut butter cookie recipe you only need 4 ingredients that you most probably already have lying around the house.
Ingredients
- 1 large egg
- 240g of regular peanut butter (smooth)
- 85g of white granulated sugar
- splash of vanilla extract (approximately 1/2 tsp)
Substitutions
- Peanut butter: I use smooth peanut butter in this recipe here as I like my cookies to be nice and smooth, however you can opt for the crunchy version or even natural peanut butter. If you’re using natural peanut butter you’ll need to strain out some of the peanut oil sitting at the top of the jar though.
- White granulated sugar: You can substitute it with brown sugar as you’ll like. It’ll have a hint of molasses in the cookies.
How to Make Peanut Butter Cookies
In a large bowl combine, the white granulated sugar with the peanut butter, 1 egg, and the vanilla extract.
Mix everything well together until the mixture forms a cookie dough like texture.
Optional step here: You can chill the cookie dough in the fridge for about an hour to minimize the cookies from spreading out too much.
Then using an either an ice cream scoop or a large scoop, scoop out about a large Tbsp of the dough onto your hands.
Then roll out the dough using your hands until it turns into a ball.
Place each piece onto a baking tray lined with parchment paper.
Now using a fork, press down on the dough both horizontally and vertically to form lines on the dough.
Bake the cookies in a preheated oven at 325°F for about 20 minutes.
Notes:
This recipe makes about 12 medium sized cookies.
If you find that the cookies spread out too much, you can chill the dough in the fridge for at least 1 hour.
Tips
- Let the cookies rest for at least 20 minutes after baking, as the cookies will be extra fragile and soft. First 10 minutes on the baking tray and then transfer to a wire rack afterwards once they have firmed up a bit.
- Chill the dough in the fridge for at least 1 hour prior to baking. This will make handling the dough while shaping it into a ball easier and also reduce the amount of spreading when baking the cookies.
- To make the cookies perfectly round after baking, use a cookie cutter with approximately the same size as the cookie and then place it on top of the cookie and give it a few swirls and also push in the edges inwards to create the perfect round shape but be extra careful though as the cookies after baking are very fragile.

The cookies can be stored in an airtight container at room temperature for up to 1 week.

Can I Use Natural Peanut Butter Instead of Regular Peanut Butter?
Yes you can! However you may need to adjust the sweetness a little bit. I find natural peanut butter not to be as sweet as regular peanut butter so you may need to add a little more sugar to the recipe.
Should I Use Smooth Peanut Butter or Crunchy Peanut Butter?
This will depend entirely on your personal preferences. I personally prefer smooth peanut butter as the cookies will just melt in your mouth and are very creamy, however some people might like a little crunch in their cookies.
Can I Freeze the Peanut Butter Cookies for Later Consumption?
Yes, you can prepare the cookie dough ahead of time and freeze them. When you’re ready to make the cookies, just take the cookies out of the freezer and shape them into cookies and then bake them in the oven as per the instructions in the recipe.
Can I Leave Peanut Butter Cookies Out Overnight?
Yes this is perfectly fine as long as you put the cookies in an air tight container. They can be left outside in room temperature for up to 1 week.
