Bacon tastes great on anything and fried rice is no exception.
This is a modern take on the traditional fried rice dish that we’ve all come to love.
Hickory smoke bacon flavor infused with the essence of garlic and shallots, coupled with fluffy eggs and rice, and the refreshing taste of green onions hitting the tips of your tongue as you bite into this delectable fried rice dish.
Bacon fried rice has all of the attributes for a irresistibly good rice dish.
And as an added bonus, it’s extremely easy to make, even a blind person could make it… well maybe not đ

Ingredients
- 2 eggs
- 3-4 strips of bacon
- 1-2 green onions
- 3 cloves of garlic
- 1 tsp of light soy sauce
- 3 Tbsp of cooking oil
- ½ tsp of black pepper
- 2-3 Shallots
- 1 tsp of white granulated sugar
- 350-400g of overnight cooked leftover long-grain Jasmine white rice
Directions
Chop your green onions into small pieces using a kitchen knife or cleaver. Once done, set aside.
Next we’re going to mince 3 cloves of garlic and 2-3 cloves of shallots.
Afterwards, we’re going to slice the bacon into small strips.
Next up, we’re going to crack 2 eggs into a small bowl and mix it well together.
Now in a heated wok, add in about 2 Tbsp of cooking oil and then add in your eggs and fry it over the wok, making sure to break the eggs into smaller pieces. Once your eggs are about 80-90% cooked, transfer the eggs out of the wok.
Now add in another 1 Tbsp of cooking oil to the wok and then fry your bacon over the wok until the bacon becomes golden brown and crispy. Once done, remove the bacon but leave a bit of the bacon fat behind.
This bacon oil will provide a tonne of flavour to our fried rice.
Now we’re going to add in our minced garlic and shallots from earlier and stir-fry this for about 20-30 seconds until you can smell the garlic and shallots becoming aromatic. Then we’re add in the white parts of our chopped green onions onto the wok and cook this for another 10-20 seconds followed by adding in our cooked leftover rice.
Make sure that you mix everything well so that the bacon flavour is evenly distributed to the rice.
We’re going to cook the rice for 3-4 minutes then add in our cooked bacon from earlier.
Continue cooking the rice until you start to hear the rice “crackle and pop” then add in your eggs from earlier, followed by 1 tsp of soy sauce, 1 tsp of white sugar, and 1/2 tsp of black pepper.
Mix everything well together, then finally add in the green parts of your chopped green onion from earlier.
Give it quick few tosses in the wok and then transfer the fried rice dish over to a bowl or plate and serve.
Notes:
For the best texture, it is highly recommended to use overnight cooked leftover rice.
Try to separate the rice when stir-frying it on the wok. The rice is nearly done when you start hearing “popping” and “cracking sounds” and the rice is separated and no longer clumped together.
You can reduce the amount of bacon fat left over from frying the bacon if you want to cut down on calories, however you should leave at least a little bit of the bacon oil as that adds a lot of flavor to the fried rice.
